- Kabocha squash - 300 grams
- Potato - 100 grams
- Green onion - 2 tablespoons, finely chopped
- Panko breadcrumbs - 1 cup
- All-purpose flour - 1/4 cup
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- Peel and cube the kabocha squash and potato. Steam them together until tender, about 15 minutes.
- In a bowl, mash the steamed kabocha squash and potato until smooth. Allow to cool slightly.
- Add the chopped green onion, salt, and black pepper to the mashed mixture. Mix well to combine.
- Shape the mixture into small patties or balls, about 2 inches in diameter.
- Dredge each patty in flour, then dip in beaten egg, and finally coat in panko breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat. Fry the croquettes until golden brown, about 3-4 minutes on each side.
- Remove from the pan and drain on paper towels before serving.
