Ingredients

  • Kabocha squash - 300 grams
  • Potato - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Soy sauce - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Panko breadcrumbs - 1 cup
  • Vegetable oil - for frying

Steps

  1. Steam or boil the kabocha squash and potato until tender, about 15-20 minutes.
  2. Drain and let them cool slightly, then mash them in a bowl until smooth.
  3. In a skillet, heat a little oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
  4. Add the sautéed onion and garlic to the mashed kabocha and potato mixture, then season with salt, black pepper, and soy sauce. Mix well.
  5. Form the mixture into small patties, about 6 cm in diameter.
  6. Dust each patty lightly with cornstarch, then dip into water, and coat with panko breadcrumbs.
  7. In a frying pan, heat vegetable oil over medium heat. Fry the croquettes for about 3-4 minutes on each side, or until golden brown.
  8. Remove the croquettes and place them on a paper towel to absorb excess oil. Serve warm.
