Kabocha Croquette

Ingredients
- Kabocha squash - 300 grams
- Potato - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Soy sauce - 1 tablespoon
- Cornstarch - 2 tablespoons
- Panko breadcrumbs - 1 cup
- Vegetable oil - for frying
Steps
- Steam or boil the kabocha squash and potato until tender, about 15-20 minutes.
- Drain and let them cool slightly, then mash them in a bowl until smooth.
- In a skillet, heat a little oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
- Add the sautéed onion and garlic to the mashed kabocha and potato mixture, then season with salt, black pepper, and soy sauce. Mix well.
- Form the mixture into small patties, about 6 cm in diameter.
- Dust each patty lightly with cornstarch, then dip into water, and coat with panko breadcrumbs.
- In a frying pan, heat vegetable oil over medium heat. Fry the croquettes for about 3-4 minutes on each side, or until golden brown.
- Remove the croquettes and place them on a paper towel to absorb excess oil. Serve warm.
