Kabocha Burger
The Kabocha Burger is a delightful vegan twist on the classic burger, featuring a rich and creamy kabocha squash patty seasoned with Japanese flavors. Served on a soft bun with fresh vegetables and a tangy miso mayo, this dish is both satisfying and nutritious.

Ingredients
- Kabocha squash - 300 grams
- Cooked quinoa - 100 grams
- Panko breadcrumbs - 50 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Miso paste - 1 tablespoon
- Vegan mayo - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Cut the kabocha squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for 25-30 minutes until tender.
- Once cooled, scoop the flesh from the skin and place it in a mixing bowl.
- Mash the kabocha squash with a fork until smooth. Add cooked quinoa, panko breadcrumbs, green onion, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.
- Form the mixture into two burger patties.
- Heat a non-stick skillet over medium heat and lightly oil it. Cook the patties for about 4-5 minutes on each side, until golden brown.
- In a small bowl, combine the miso paste and vegan mayo to make the miso mayo dressing.
- To assemble the burgers, spread the miso mayo on the bottom half of each burger bun. Layer with lettuce, the kabocha patty, sliced tomato, and avocado. Top with the upper half of the bun.
- Serve immediately and enjoy your delicious Kabocha Burger!
