Ingredients

  • all-purpose flour - 100 grams
  • baking powder - 1 teaspoon
  • sugar - 30 grams
  • milk - 120 ml
  • egg - 1 large
  • vanilla extract - 1 teaspoon
  • salt - a pinch
  • vegetable oil - for cooking
  • maple syrup - for serving
  • fresh fruits (e.g., strawberries, blueberries) - for garnish

Steps

  1. In a mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and a pinch of salt.
  2. In another bowl, beat the egg and mix in the milk and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and fold gently until just combined. Be careful not to overmix; some lumps are okay.
  4. Let the batter rest for about 10 minutes to allow the baking powder to activate.
  5. Heat a non-stick skillet over low to medium heat and lightly grease it with vegetable oil.
  6. Using a 1/4 cup measure, pour the batter onto the skillet, allowing space between each pancake as they will spread slightly.
  7. Cover the skillet with a lid and cook for about 3-4 minutes until bubbles form on the surface and the bottom is golden brown.
  8. Flip the pancakes carefully and cook for an additional 3-4 minutes, covered, until the other side is golden and fluffy.
  9. Remove from the skillet and keep warm while you repeat with the remaining batter.
  10. Serve the pancakes stacked, drizzled with maple syrup, and topped with fresh fruits.
