Ingredients
- all-purpose flour - 100 grams
- baking powder - 1 teaspoon
- sugar - 30 grams
- milk - 120 ml
- egg - 1 large
- vanilla extract - 1 teaspoon
- salt - a pinch
- vegetable oil - for cooking
- maple syrup - for serving
- fresh fruits (e.g., strawberries, blueberries) - for garnish
Steps
- In a mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and a pinch of salt.
- In another bowl, beat the egg and mix in the milk and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and fold gently until just combined. Be careful not to overmix; some lumps are okay.
- Let the batter rest for about 10 minutes to allow the baking powder to activate.
- Heat a non-stick skillet over low to medium heat and lightly grease it with vegetable oil.
- Using a 1/4 cup measure, pour the batter onto the skillet, allowing space between each pancake as they will spread slightly.
- Cover the skillet with a lid and cook for about 3-4 minutes until bubbles form on the surface and the bottom is golden brown.
- Flip the pancakes carefully and cook for an additional 3-4 minutes, covered, until the other side is golden and fluffy.
- Remove from the skillet and keep warm while you repeat with the remaining batter.
- Serve the pancakes stacked, drizzled with maple syrup, and topped with fresh fruits.
