Ingredients

  • Bread flour - 200 grams
  • Active dry yeast - 5 grams
  • Warm water - 120 ml
  • Sugar - 10 grams
  • Salt - 5 grams
  • Baking soda - 1 teaspoon
  • Miso paste - 1 tablespoon
  • Sesame seeds - 2 tablespoons
  • Egg - 1 (for egg wash)

Steps

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a separate bowl, combine bread flour and salt. Gradually add the yeast mixture and knead until a smooth dough forms.
  3. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
  4. Preheat your oven to 200°C (400°F).
  5. Once the dough has risen, punch it down and divide it into 2 equal pieces. Shape each piece into a bagel by forming a ring.
  6. In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 1 minute on each side.
  7. Remove the bagels and place them on a baking sheet lined with parchment paper.
  8. In a small bowl, mix miso paste with a little water to create a glaze. Brush this mixture over the bagels.
  9. Sprinkle sesame seeds on top of the glazed bagels.
  10. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  11. Let the bagels cool slightly before serving.
