Ingredients

  • Sushi rice - 150 grams
  • Water - 180 ml
  • Inari age (tofu pouches) - 4 pieces
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sugar - 1 tablespoon
  • Rice vinegar - 15 ml
  • Salt - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon
  • Chopped green onions - 2 tablespoons

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed sushi rice and water, and let it soak for 30 minutes.
  3. After soaking, bring the rice to a boil over medium heat, cover, and reduce to low heat for 15 minutes.
  4. Remove from heat and let the rice sit covered for 10 minutes to steam.
  5. In a small saucepan, mix soy sauce, mirin, sugar, rice vinegar, and salt over low heat until sugar dissolves, then remove from heat.
  6. Gently fold the seasoning mixture into the cooked rice, allowing it to cool to room temperature.
  7. Prepare the inari age by gently opening each tofu pouch.
  8. Fill each pouch with the seasoned sushi rice, packing it lightly to prevent tearing.
  9. Sprinkle sesame seeds and chopped green onions on top of the filled pouches before serving.
