Ingredients
- Inari tofu pockets - 8 pieces
- Sushi rice - 150 grams
- Water - 200 ml
- Rice vinegar - 2 tablespoons
- Sugar - 1 tablespoon
- Salt - 1/2 teaspoon
- Carrot - 1 small, finely diced
- Cucumber - 1 small, finely diced
- Sesame seeds - 1 tablespoon
- Nori sheets - 1, cut into thin strips
- Green onions - 2, finely chopped
Steps
- Rinse the sushi rice under cold water until the water runs clear, then drain.
- In a pot, combine the rinsed sushi rice and 200 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
- Remove the pot from heat and let the rice sit, covered, for another 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice gently to season it, then let it cool.
- While the rice is cooling, prepare the filling. In a bowl, combine the diced carrot, cucumber, sesame seeds, chopped green onions, and a pinch of salt.
- Once the rice is at room temperature, take a piece of inari tofu pocket and gently open it.
- Fill each inari pocket with the seasoned rice, packing it lightly. Top with the vegetable mixture and a strip of nori if desired.
- Repeat the process for the remaining inari pockets, then serve immediately or chill for a refreshing appetizer.
