- Inari tofu pockets - 8 pieces
- Sushi rice - 150 grams
- Water - 200 ml
- Rice vinegar - 2 tablespoons
- Sugar - 1 tablespoon
- Salt - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Cucumber - 1 small, finely diced
- Carrot - 1 small, grated
- Nori sheets - 1, cut into strips
- Chives - a handful, chopped
Steps
- Rinse the sushi rice under cold water until the water runs clear, then drain.
- In a saucepan, combine the rinsed sushi rice and 200 ml of water, and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, turn off the heat and let the rice sit covered for an additional 10 minutes.
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is ready, transfer it to a large bowl and gently fold in the vinegar mixture.
- Allow the seasoned rice to cool to room temperature.
- While the rice is cooling, prepare the Inari tofu pockets by gently opening them and placing them on a plate.
- Once the rice is cool, mix in the diced cucumber, grated carrot, sesame seeds, and chopped chives.
- Stuff each Inari tofu pocket with the sushi rice mixture, pressing gently to fill them evenly.
- Serve immediately, garnished with nori strips and additional sesame seeds if desired.
