Inari Sushi

Ingredients

  • Inari tofu pockets - 8 pieces
  • Sushi rice - 150 grams
  • Water - 200 ml
  • Rice vinegar - 2 tablespoons
  • Sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Cucumber - 1 small, finely diced
  • Carrot - 1 small, grated
  • Nori sheets - 1, cut into strips
  • Chives - a handful, chopped

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a saucepan, combine the rinsed sushi rice and 200 ml of water, and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  3. After 15 minutes, turn off the heat and let the rice sit covered for an additional 10 minutes.
  4. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is ready, transfer it to a large bowl and gently fold in the vinegar mixture.
  5. Allow the seasoned rice to cool to room temperature.
  6. While the rice is cooling, prepare the Inari tofu pockets by gently opening them and placing them on a plate.
  7. Once the rice is cool, mix in the diced cucumber, grated carrot, sesame seeds, and chopped chives.
  8. Stuff each Inari tofu pocket with the sushi rice mixture, pressing gently to fill them evenly.
  9. Serve immediately, garnished with nori strips and additional sesame seeds if desired.
