Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 180 milliliters
  • Ikura (salmon roe) - 100 grams
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Nori (seaweed) - 1 sheet, cut into strips
  • Chopped green onions - 2 tablespoons
  • Sesame seeds - 1 teaspoon (optional)

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear. Drain well.
  2. In a rice cooker or pot, combine the rinsed rice and 180 milliliters of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed.
  3. While the rice cooks, prepare the soy sauce and mirin mixture in a small bowl.
  4. Once the rice is done, fluff it with a fork and let it sit covered for 5 minutes.
  5. Serve the warm rice in two bowls. Drizzle the soy sauce and mirin mixture over the rice.
  6. Top each bowl with 50 grams of ikura, sprinkle with chopped green onions and sesame seeds, and garnish with nori strips.
