Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 200 ml
  • Salmon roe (Ikura) - 100 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Chopped green onions - 2 tablespoons
  • Nori (seaweed) - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain.
  2. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then cover and simmer on low heat for about 15-20 minutes until the rice is tender and the water is absorbed.
  3. While the rice is cooking, prepare the seasoning by mixing soy sauce and mirin in a small bowl.
  4. Once the rice is cooked, fluff it with a fork and divide it into two bowls.
  5. Top each bowl of rice with 50 grams of salmon roe, drizzling the soy sauce and mirin mixture over the top.
  6. Garnish with chopped green onions, strips of nori, and toasted sesame seeds before serving.
