Ikura Don

Ingredients
- short-grain sushi rice - 150g
- water - 200ml
- salt - 1/2 tsp
- rice vinegar - 1 tbsp
- sugar - 1 tsp
- fresh ikura (salmon roe) - 100g
- nori seaweed - 1 sheet, shredded
- avocado - 1 medium, sliced
- cucumber - 1/2 medium, thinly sliced
- green onion - 1 stalk, chopped
- soy sauce - 2 tbsp
Steps
- Rinse the sushi rice under cold water until the water runs clear, then soak the rice in water for 30 minutes.
- Drain the rice and combine it with 200ml of fresh water in a rice cooker, adding 1/2 tsp of salt. Cook according to the rice cooker instructions.
- Once the rice is cooked, transfer it to a large bowl. Mix rice vinegar and sugar in a small bowl, then gently fold this mixture into the warm rice. Let it cool slightly.
- Prepare the toppings: slice the avocado and cucumber, chop the green onion, and shred the nori.
- To assemble the Ikura Don, divide the seasoned rice into two bowls. Top each bowl with 50g of ikura, sliced avocado, cucumber, and a sprinkle of shredded nori.
- Drizzle 1 tbsp of soy sauce over each bowl before serving. Garnish with chopped green onion.
