Ingredients

  • short-grain sushi rice - 150g
  • water - 200ml
  • salt - 1/2 tsp
  • rice vinegar - 1 tbsp
  • sugar - 1 tsp
  • fresh ikura (salmon roe) - 100g
  • nori seaweed - 1 sheet, shredded
  • avocado - 1 medium, sliced
  • cucumber - 1/2 medium, thinly sliced
  • green onion - 1 stalk, chopped
  • soy sauce - 2 tbsp

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then soak the rice in water for 30 minutes.
  2. Drain the rice and combine it with 200ml of fresh water in a rice cooker, adding 1/2 tsp of salt. Cook according to the rice cooker instructions.
  3. Once the rice is cooked, transfer it to a large bowl. Mix rice vinegar and sugar in a small bowl, then gently fold this mixture into the warm rice. Let it cool slightly.
  4. Prepare the toppings: slice the avocado and cucumber, chop the green onion, and shred the nori.
  5. To assemble the Ikura Don, divide the seasoned rice into two bowls. Top each bowl with 50g of ikura, sliced avocado, cucumber, and a sprinkle of shredded nori.
  6. Drizzle 1 tbsp of soy sauce over each bowl before serving. Garnish with chopped green onion.
