Ingredients
- 2 medium squid (cleaned)
- 150 grams sushi rice
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 teaspoon sesame oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 100 ml dashi broth (or water)
- 1 tablespoon chopped green onions
- Salt and pepper to taste
Steps
- Rinse the sushi rice under cold water until the water runs clear, then soak for 30 minutes.
- In a pot, heat sesame oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Drain the rice and add it to the pot with the sautéed onions and garlic. Stir for a couple of minutes.
- Add the dashi broth, soy sauce, and mirin to the pot. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes or until rice is cooked and liquid is absorbed.
- While the rice is cooking, prepare the squid by gently pulling the body open and stuffing it with the cooked rice mixture, leaving a little space at the top for expansion. Secure the opening with toothpicks.
- In a separate pot, place the stuffed squid and add enough water to cover them halfway. Bring to a simmer and cook for 10-15 minutes until the squid is tender.
- Remove the squid from the pot and slice into rounds. Serve garnished with chopped green onions.
