Ingredients

  • 2 medium squid (cleaned)
  • 150 grams sushi rice
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 100 ml dashi broth (or water)
  • 1 tablespoon chopped green onions
  • Salt and pepper to taste

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, heat sesame oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  3. Drain the rice and add it to the pot with the sautéed onions and garlic. Stir for a couple of minutes.
  4. Add the dashi broth, soy sauce, and mirin to the pot. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes or until rice is cooked and liquid is absorbed.
  5. While the rice is cooking, prepare the squid by gently pulling the body open and stuffing it with the cooked rice mixture, leaving a little space at the top for expansion. Secure the opening with toothpicks.
  6. In a separate pot, place the stuffed squid and add enough water to cover them halfway. Bring to a simmer and cook for 10-15 minutes until the squid is tender.
  7. Remove the squid from the pot and slice into rounds. Serve garnished with chopped green onions.
