Steps
- Bring a pot of water to a boil and cook the somen noodles according to package instructions (usually about 3-4 minutes).
- Once cooked, drain the noodles and rinse them under cold running water to stop the cooking process. Transfer to a bowl of ice water to chill.
- In a mixing bowl, combine the soy sauce, yuzu juice, sesame oil, salt, and pepper to create the dressing.
- In a pan over medium heat, lightly sauté the sliced squid for about 2-3 minutes until they are opaque, then remove from heat.
- Drain the chilled somen noodles and arrange them on two plates.
- Top the noodles with the sautéed squid, julienned cucumber, and carrot.
