  • Fresh cilantro (chopped) - 2 tablespoons
  • Soy sauce (halal) - 3 tablespoons
  • Yuzu juice (or lemon juice) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Ice water - for chilling

Steps

  1. Bring a pot of water to a boil and cook the somen noodles according to package instructions (usually about 3-4 minutes).
  2. Once cooked, drain the noodles and rinse them under cold running water to stop the cooking process. Transfer to a bowl of ice water to chill.
  3. In a mixing bowl, combine the soy sauce, yuzu juice, sesame oil, salt, and pepper to create the dressing.
  4. In a pan over medium heat, lightly sauté the sliced squid for about 2-3 minutes until they are opaque, then remove from heat.
  5. Drain the chilled somen noodles and arrange them on two plates.
  6. Top the noodles with the sautéed squid, julienned cucumber, and carrot.
  7. Drizzle the dressing over the top and garnish with sliced green onion and chopped cilantro.
