Ingredients

  • Beef small intestines - 200 grams
  • Pork liver - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Lemon - 1, for garnish

Steps

  1. Clean the beef small intestines and pork liver under cold water, removing any excess fat. Cut them into bite-sized pieces.
  2. In a bowl, mix the soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
  3. Add the cleaned offal to the marinade and let it sit for at least 15 minutes to absorb the flavors.
  4. Preheat a grill or BBQ pan over medium-high heat.
  5. Season the marinated offal with salt and black pepper, then thread them onto skewers or place them directly on the grill.
  6. Grill for about 5-7 minutes on each side, or until fully cooked and slightly charred.
  7. Remove from the grill and sprinkle with chopped green onions.
  8. Serve hot with lemon wedges on the side for an added zesty flavor.
