Ingredients

  • Sweet rice flour (mochi flour) - 100 grams
  • Granulated sugar - 40 grams
  • Water - 50 ml
  • Cornstarch - 20 grams (for dusting)
  • Matcha powder - 1 teaspoon
  • Red bean paste (kosher certified) - 50 grams

Steps

  1. In a mixing bowl, combine sweet rice flour and granulated sugar.
  2. Gradually add water to the flour mixture while stirring, until a smooth batter forms.
  3. Divide the batter into two equal portions. To one portion, add matcha powder and mix until well combined.
  4. Prepare a steamer by bringing water to a boil. Line a small steaming dish or plate with parchment paper.
  5. Pour each batter portion into separate sections of the lined steaming dish, smoothing the tops.
  6. Steam the batter for about 15 minutes, or until it becomes firm and translucent.
  7. Once steamed, remove from the steamer and let cool for a few minutes.
  8. Dust a clean surface with cornstarch, then turn out the steamed sweets onto the surface.
  9. Cut each portion into squares or desired shapes and fill half with a small amount of red bean paste.
  10. Fold or sandwich the cut pieces and dust with more cornstarch to prevent sticking.
