Ingredients
- Adzuki beans - 100 grams
- Water - 500 milliliters
- Granulated sugar - 50 grams
- Matcha powder - 1 teaspoon
- Sesame seeds (toasted) - 2 tablespoons
- Cornstarch - 1 tablespoon
- Salt - a pinch
Steps
- Soak the adzuki beans in water overnight to soften them.
- Drain and rinse the beans, then place them in a pot with 500ml of fresh water and a pinch of salt.
- Bring the water to a boil, then reduce the heat and simmer the beans for about 30 minutes, or until they are tender.
- Add 50 grams of granulated sugar to the pot and stir until dissolved. Cook for an additional 10 minutes, then remove from heat.
- In a separate bowl, mix 1 tablespoon of cornstarch with a little water to create a slurry.
- Return the pot to low heat and stir in the cornstarch slurry, cooking until the mixture thickens and becomes sticky.
- Once the mixture has thickened, remove it from heat and let it cool slightly.
- Divide the mixture into two equal portions and shape them into small rectangular pieces.
- Dust the tops with 1 teaspoon of matcha powder and sprinkle 2 tablespoons of toasted sesame seeds on top.
- Allow the Higashi to cool completely before serving.
