Ingredients

  • Japanese sweet potato - 200 grams
  • Almond flour - 50 grams
  • Maple syrup - 2 tablespoons
  • Coconut oil - 1 tablespoon
  • Matcha powder - 1 teaspoon
  • Sea salt - a pinch
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash the Japanese sweet potato and pierce it several times with a fork.
  3. Wrap the sweet potato in aluminum foil and bake in the preheated oven for about 25 minutes or until tender.
  4. Once baked, remove the sweet potato from the oven and let it cool slightly before peeling off the skin.
  5. In a mixing bowl, mash the peeled sweet potato until smooth.
  6. Add almond flour, maple syrup, coconut oil, matcha powder, and a pinch of sea salt to the mashed sweet potato, and mix until thoroughly combined.
  7. Divide the mixture into two equal portions and shape each portion into a small rectangular or round piece.
  8. Place the formed Higashi on a plate and refrigerate for at least 10 minutes to firm up before serving.
