- Japanese sweet potato - 200 grams
- Almond flour - 50 grams
- Maple syrup - 2 tablespoons
- Coconut oil - 1 tablespoon
- Matcha powder - 1 teaspoon
- Sea salt - a pinch
- Water - 2 tablespoons
Steps
- Preheat the oven to 200°C (390°F).
- Wash the Japanese sweet potato and pierce it several times with a fork.
- Wrap the sweet potato in aluminum foil and bake in the preheated oven for about 25 minutes or until tender.
- Once baked, remove the sweet potato from the oven and let it cool slightly before peeling off the skin.
- In a mixing bowl, mash the peeled sweet potato until smooth.
- Add almond flour, maple syrup, coconut oil, matcha powder, and a pinch of sea salt to the mashed sweet potato, and mix until thoroughly combined.
- Divide the mixture into two equal portions and shape each portion into a small rectangular or round piece.
- Place the formed Higashi on a plate and refrigerate for at least 10 minutes to firm up before serving.
