- Glutinous rice flour - 100 grams
- Water - 120 ml
- Honey - 1 tablespoon
- Matcha powder - 1 teaspoon
- Fresh strawberries - 4 medium, diced
- Shredded coconut - 2 tablespoons
- Sesame seeds - 1 tablespoon
Steps
- In a mixing bowl, combine the glutinous rice flour and water. Stir until smooth and there are no lumps.
- Divide the mixture into two bowls. In one bowl, add honey and mix well. In the other bowl, add matcha powder and mix until combined.
- Cover both bowls with plastic wrap and steam them over boiling water for about 15 minutes, or until the mixture becomes translucent and firm.
- Once cooked, remove from the steamer and allow to cool slightly. On a clean surface, dust with cornstarch to prevent sticking.
- Divide each mixture into equal pieces and shape them into small balls or squares.
- Roll half of the pieces in shredded coconut and the other half in sesame seeds.
- Serve the Higashi topped with diced strawberries for a fresh, fruity element.
