Ingredients

  • Glutinous rice flour - 100 grams
  • Water - 120 ml
  • Honey - 1 tablespoon
  • Matcha powder - 1 teaspoon
  • Fresh strawberries - 4 medium, diced
  • Shredded coconut - 2 tablespoons
  • Sesame seeds - 1 tablespoon

Steps

  1. In a mixing bowl, combine the glutinous rice flour and water. Stir until smooth and there are no lumps.
  2. Divide the mixture into two bowls. In one bowl, add honey and mix well. In the other bowl, add matcha powder and mix until combined.
  3. Cover both bowls with plastic wrap and steam them over boiling water for about 15 minutes, or until the mixture becomes translucent and firm.
  4. Once cooked, remove from the steamer and allow to cool slightly. On a clean surface, dust with cornstarch to prevent sticking.
  5. Divide each mixture into equal pieces and shape them into small balls or squares.
  6. Roll half of the pieces in shredded coconut and the other half in sesame seeds.
  7. Serve the Higashi topped with diced strawberries for a fresh, fruity element.
