Ingredients

  • Whole wheat flour - 150 grams
  • Vital wheat gluten - 30 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Salt - 3 grams
  • Olive oil - 10 ml
  • Miso paste - 30 grams
  • Soy sauce - 10 ml
  • Mirin - 10 ml
  • Fresh spinach - 50 grams
  • Shitake mushrooms - 50 grams, sliced
  • Bell pepper - 50 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Mozzarella cheese - 100 grams, shredded
  • Sesame seeds - 5 grams

Steps

  1. In a bowl, combine warm water, active dry yeast, and a pinch of sugar. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine whole wheat flour, vital wheat gluten, and salt. Add the yeast mixture and olive oil, and knead until a smooth dough forms.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough rises, prepare the sauce by mixing miso paste, soy sauce, and mirin in a small bowl until smooth.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, roll it out into a 10-inch circle on a lightly floured surface.
  7. Transfer the dough to a parchment-lined baking sheet. Spread the miso sauce evenly over the base.
  8. Top the pizza with fresh spinach, sliced shiitake mushrooms, bell pepper, and cherry tomatoes.
  9. Sprinkle shredded mozzarella cheese over the top and finish with sesame seeds.
  10. Bake in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is bubbling.
  11. Remove from the oven, let it cool slightly, slice, and serve.
