- Mirin - 10 ml
- Fresh spinach - 50 grams
- Shitake mushrooms - 50 grams, sliced
- Bell pepper - 50 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Mozzarella cheese - 100 grams, shredded
- Sesame seeds - 5 grams
Steps
- In a bowl, combine warm water, active dry yeast, and a pinch of sugar. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine whole wheat flour, vital wheat gluten, and salt. Add the yeast mixture and olive oil, and knead until a smooth dough forms.
- Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough rises, prepare the sauce by mixing miso paste, soy sauce, and mirin in a small bowl until smooth.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, roll it out into a 10-inch circle on a lightly floured surface.
- Transfer the dough to a parchment-lined baking sheet. Spread the miso sauce evenly over the base.
- Top the pizza with fresh spinach, sliced shiitake mushrooms, bell pepper, and cherry tomatoes.
- Sprinkle shredded mozzarella cheese over the top and finish with sesame seeds.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is bubbling.
- Remove from the oven, let it cool slightly, slice, and serve.
