- Hōtō noodles - 200 grams
- Water - 1.5 liters
- Miso paste - 3 tablespoons
- Soy sauce - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Pumpkin - 100 grams, cubed
- Shiitake mushrooms - 100 grams, sliced
- Spring onions - 2, chopped
- Tofu - 200 grams, cubed
- Sesame seeds - 1 tablespoon, for garnish
Steps
- In a large pot, heat the vegetable oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
- Add sliced carrots, zucchini, pumpkin, and shiitake mushrooms to the pot. Cook for about 5 minutes until vegetables start to soften.
- Pour in 1.5 liters of water and bring to a boil. Once boiling, reduce heat to a simmer.
- Stir in miso paste and soy sauce, mixing well until the miso is fully dissolved.
- Add the Hōtō noodles and cubed tofu to the broth. Cook for an additional 10-12 minutes, or until noodles are tender.
- Garnish with chopped spring onions and sesame seeds before serving.
