Ingredients

  • Hōtō noodles - 200 grams
  • Water - 1.5 liters
  • Miso paste - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Pumpkin - 100 grams, cubed
  • Shiitake mushrooms - 100 grams, sliced
  • Spring onions - 2, chopped
  • Tofu - 200 grams, cubed
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
  2. Add sliced carrots, zucchini, pumpkin, and shiitake mushrooms to the pot. Cook for about 5 minutes until vegetables start to soften.
  3. Pour in 1.5 liters of water and bring to a boil. Once boiling, reduce heat to a simmer.
  4. Stir in miso paste and soy sauce, mixing well until the miso is fully dissolved.
  5. Add the Hōtō noodles and cubed tofu to the broth. Cook for an additional 10-12 minutes, or until noodles are tender.
  6. Garnish with chopped spring onions and sesame seeds before serving.
