Ingredients

  • Udon noodles - 200 grams
  • Daikon radish - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Sweet potato - 150 grams, cubed
  • Shiitake mushrooms - 100 grams, sliced
  • Zucchini - 1 medium, sliced
  • Miso paste - 3 tablespoons
  • Vegetable broth - 1 liter
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, sliced for garnish
  • Tofu - 100 grams, cubed (optional)

Steps

  1. In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  2. Add the sliced daikon, carrot, sweet potato, shiitake mushrooms, and zucchini to the pot and sauté for 5-7 minutes until slightly softened.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Stir in the miso paste and soy sauce until fully dissolved.
  5. Add the udon noodles and tofu (if using) to the pot, and cook for an additional 8-10 minutes, or until the noodles are tender.
  6. Taste and adjust seasoning if needed, then serve hot, garnished with sliced green onions.
