- Shiitake mushrooms - 100 grams, sliced
- Zucchini - 1 medium, sliced
- Miso paste - 3 tablespoons
- Vegetable broth - 1 liter
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, sliced for garnish
- Tofu - 100 grams, cubed (optional)
Steps
- In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
- Add the sliced daikon, carrot, sweet potato, shiitake mushrooms, and zucchini to the pot and sauté for 5-7 minutes until slightly softened.
- Pour in the vegetable broth and bring to a simmer.
- Stir in the miso paste and soy sauce until fully dissolved.
- Add the udon noodles and tofu (if using) to the pot, and cook for an additional 8-10 minutes, or until the noodles are tender.
- Taste and adjust seasoning if needed, then serve hot, garnished with sliced green onions.
