Ingredients

  • beef tongue - 300 grams
  • soy sauce - 2 tablespoons
  • mirin - 1 tablespoon
  • sake - 1 tablespoon
  • honey - 1 teaspoon
  • garlic - 2 cloves, minced
  • ginger - 1 teaspoon, grated
  • black pepper - 1/2 teaspoon
  • green onions - 2 stalks, chopped
  • sesame oil - 1 teaspoon
  • lettuce leaves - for serving
  • lemon wedges - for garnish

Steps

  1. Start by thoroughly cleaning the beef tongue under cold water. Place it in a pot of boiling water and cook for 10 minutes to remove impurities.
  2. Remove the beef tongue from the boiling water and let it cool. Once cool enough to handle, peel off the tough outer skin.
  3. In a bowl, combine soy sauce, mirin, sake, honey, minced garlic, grated ginger, and black pepper to create a marinade.
  4. Slice the beef tongue into 1 cm thick slices and add them to the marinade. Let it marinate for at least 30 minutes in the refrigerator.
  5. Preheat a grill or grill pan over medium-high heat. Remove the tongue slices from the marinade and grill for about 2-3 minutes on each side until browned and slightly charred.
  6. Once grilled, drizzle with sesame oil and sprinkle with chopped green onions.
  7. Serve the grilled gyutan on a plate with lettuce leaves for wrapping and lemon wedges on the side for garnish.
