- beef tongue - 300 grams
- soy sauce - 2 tablespoons
- mirin - 1 tablespoon
- sake - 1 tablespoon
- honey - 1 teaspoon
- garlic - 2 cloves, minced
- ginger - 1 teaspoon, grated
- black pepper - 1/2 teaspoon
- green onions - 2 stalks, chopped
- sesame oil - 1 teaspoon
- lettuce leaves - for serving
- lemon wedges - for garnish
Steps
- Start by thoroughly cleaning the beef tongue under cold water. Place it in a pot of boiling water and cook for 10 minutes to remove impurities.
- Remove the beef tongue from the boiling water and let it cool. Once cool enough to handle, peel off the tough outer skin.
- In a bowl, combine soy sauce, mirin, sake, honey, minced garlic, grated ginger, and black pepper to create a marinade.
- Slice the beef tongue into 1 cm thick slices and add them to the marinade. Let it marinate for at least 30 minutes in the refrigerator.
- Preheat a grill or grill pan over medium-high heat. Remove the tongue slices from the marinade and grill for about 2-3 minutes on each side until browned and slightly charred.
- Once grilled, drizzle with sesame oil and sprinkle with chopped green onions.
- Serve the grilled gyutan on a plate with lettuce leaves for wrapping and lemon wedges on the side for garnish.
