  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Dashi stock - 500 milliliters
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Tofu (firm) - 100 grams, cubed
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a medium pot, heat the sesame oil over medium heat. Add the sliced onions and sauté until they become translucent.
  2. Add the thinly sliced beef to the pot and cook until browned, about 3-5 minutes.
  3. Stir in the mushrooms, daikon, and carrot, and cook for another 3 minutes until the vegetables start to soften.
  4. Pour in the dashi stock, soy sauce, and mirin. Bring the mixture to a gentle simmer.
  5. Add the cubed tofu to the soup and let it simmer for 10 minutes, allowing the flavors to meld.
  6. Season with salt and pepper to taste. If needed, adjust the seasoning based on personal preference.
  7. Serve the Gyudon Soup hot, garnished with chopped green onions.
