Gyu-tan, or grilled beef tongue, is a delicacy in Japanese cuisine known for its rich flavor and tender texture. This high-protein dish is complemented by a savory tare sauce, making it a delightful BBQ experience.

Ingredients

  • Beef tongue - 300 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sake - 15 ml
  • Sugar - 10 grams
  • Garlic - 1 clove, minced
  • Salt - 5 grams
  • Black pepper - 2 grams
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 10 grams

Steps

  1. Rinse the beef tongue under cold water and soak in a pot of water for 10 minutes.
  2. In a saucepan, combine soy sauce, mirin, sake, sugar, and minced garlic. Heat over medium heat until the sugar dissolves, then remove from heat to cool.
  3. Place the beef tongue in a pot of boiling water and simmer for about 30 minutes until tender.
  4. Remove the tongue from the pot, let it cool slightly, and peel off the outer skin.
  5. Slice the beef tongue into 1 cm thick slices and season with salt and black pepper.
  6. Preheat a grill or grill pan to medium-high heat. Grill the beef tongue slices for about 2-3 minutes on each side until they are nicely charred.
  7. Brush the tare sauce over the grilled tongue while cooking for added flavor.
  8. Serve hot, garnished with chopped green onions and sesame seeds.
