Gyu-tan
Gyu-tan, or grilled beef tongue, is a delicacy in Japanese cuisine known for its rich flavor and tender texture. This high-protein dish is complemented by a savory tare sauce, making it a delightful BBQ experience.

Ingredients
- Beef tongue - 300 grams
- Soy sauce - 30 ml
- Mirin - 15 ml
- Sake - 15 ml
- Sugar - 10 grams
- Garlic - 1 clove, minced
- Salt - 5 grams
- Black pepper - 2 grams
- Green onions - 2 stalks, chopped
- Sesame seeds - 10 grams
Steps
- Rinse the beef tongue under cold water and soak in a pot of water for 10 minutes.
- In a saucepan, combine soy sauce, mirin, sake, sugar, and minced garlic. Heat over medium heat until the sugar dissolves, then remove from heat to cool.
- Place the beef tongue in a pot of boiling water and simmer for about 30 minutes until tender.
- Remove the tongue from the pot, let it cool slightly, and peel off the outer skin.
- Slice the beef tongue into 1 cm thick slices and season with salt and black pepper.
- Preheat a grill or grill pan to medium-high heat. Grill the beef tongue slices for about 2-3 minutes on each side until they are nicely charred.
- Brush the tare sauce over the grilled tongue while cooking for added flavor.
- Serve hot, garnished with chopped green onions and sesame seeds.
