Ingredients

  • Beef tongue - 300 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sake - 2 tablespoons
  • Honey - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Start by cleaning the beef tongue under cold running water. Remove any excess fat or skin.
  2. In a bowl, combine soy sauce, mirin, sake, honey, minced garlic, grated ginger, sesame oil, and black pepper to create the marinade.
  3. Place the cleaned beef tongue in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably overnight for deeper flavor.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Remove the tongue from the marinade and let any excess drip off. Grill the tongue for about 6-8 minutes on each side, or until cooked through and nicely charred.
  6. Once grilled, allow the tongue to rest for 5 minutes before slicing it thinly against the grain.
  7. Serve the sliced gyu tan garnished with chopped green onions and sesame seeds.
