Ingredients

  • Bitter melon (Goya) - 150 grams, sliced
  • Firm tofu - 200 grams, cubed
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Onion - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce (Halal) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)

Steps

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add the cubed tofu and fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the sliced onion and garlic. Sauté until the onion becomes translucent, about 3 minutes.
  4. Add the sliced bitter melon, carrot, and bell pepper to the skillet. Stir-fry for about 5 minutes until the vegetables are tender yet crisp.
  5. Return the fried tofu to the skillet and drizzle with soy sauce and sesame oil. Toss everything together to combine well.
  6. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes.
  7. Garnish with chopped green onions before serving.
