Ingredients
- Bitter melon (Goya) - 150 grams, sliced
- Firm tofu - 200 grams, cubed
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Soy sauce (Halal) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2, chopped (for garnish)
Steps
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add the cubed tofu and fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the sliced onion and garlic. Sauté until the onion becomes translucent, about 3 minutes.
- Add the sliced bitter melon, carrot, and bell pepper to the skillet. Stir-fry for about 5 minutes until the vegetables are tender yet crisp.
- Return the fried tofu to the skillet and drizzle with soy sauce and sesame oil. Toss everything together to combine well.
- Season with salt and black pepper to taste. Cook for an additional 2-3 minutes.
- Garnish with chopped green onions before serving.
