Ingredients

  • Bitter melon - 200 grams
  • Firm tofu - 150 grams
  • Pork belly (thinly sliced) - 100 grams
  • Onion - 1 medium (about 150 grams)
  • Garlic - 2 cloves
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions (for garnish) - 2 stalks

Steps

  1. 1. Begin by slicing the bitter melon in half lengthwise, removing the seeds, and cutting it into thin half-moon slices.
  2. 2. Blanch the bitter melon in boiling water for 2-3 minutes, then drain and set aside to reduce its bitterness.
  3. 3. Cut the firm tofu into bite-sized cubes and pat dry with a paper towel to remove excess moisture.
  4. 4. Heat sesame oil in a large pan over medium heat, then add the sliced pork belly and cook until browned and cooked through, about 5-7 minutes.
  5. 5. Add minced garlic and sliced onion to the pan with the pork, sautéing until the onion is translucent, about 3-4 minutes.
  6. 6. Gently add the blanched bitter melon and tofu cubes to the pan, stirring carefully to combine all ingredients.
  7. 7. Drizzle soy sauce over the mixture, season with salt and black pepper to taste, and stir-fry for an additional 5 minutes.
  8. 8. Remove from heat and garnish with chopped green onions before serving.
