Steps
- 1. Begin by slicing the bitter melon in half lengthwise, removing the seeds, and cutting it into thin half-moon slices.
- 2. Blanch the bitter melon in boiling water for 2-3 minutes, then drain and set aside to reduce its bitterness.
- 3. Cut the firm tofu into bite-sized cubes and pat dry with a paper towel to remove excess moisture.
- 4. Heat sesame oil in a large pan over medium heat, then add the sliced pork belly and cook until browned and cooked through, about 5-7 minutes.
- 5. Add minced garlic and sliced onion to the pan with the pork, sautéing until the onion is translucent, about 3-4 minutes.
- 6. Gently add the blanched bitter melon and tofu cubes to the pan, stirring carefully to combine all ingredients.
- 7. Drizzle soy sauce over the mixture, season with salt and black pepper to taste, and stir-fry for an additional 5 minutes.
- 8. Remove from heat and garnish with chopped green onions before serving.
