Ingredients

  • Goya (bitter melon) - 100g, thinly sliced
  • Ground chicken - 200g
  • Green onion - 2, finely chopped
  • Ginger - 1 tsp, grated
  • Garlic - 1 clove, minced
  • Soy sauce - 1 tbsp
  • Sesame oil - 1 tsp
  • Panko breadcrumbs - 2 tbsp
  • Egg - 1, lightly beaten
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Sliced tomatoes - 4 slices
  • Avocado - 1/2, sliced

Steps

  1. In a large mixing bowl, combine ground chicken, sliced Goya, green onion, ginger, garlic, soy sauce, sesame oil, panko breadcrumbs, beaten egg, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into two burger patties.
  3. Heat a non-stick skillet over medium heat and add a little oil.
  4. Cook the patties for about 5-6 minutes on each side, or until fully cooked and browned.
  5. While the patties are cooking, lightly toast the whole wheat burger buns in a separate skillet or toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomatoes, and avocado. Top with the other half of the bun.
  7. Serve immediately with a side of fresh salad or steamed vegetables.
