Ingredients
- Japanese short-grain rice - 150 grams
- Water - 300 ml
- Carrot - 1 medium, julienned
- Shiitake mushrooms - 100 grams, sliced
- Snow peas - 50 grams, trimmed
- Edamame (shelled) - 50 grams
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Ground black pepper - to taste
- Chopped green onions - 2 tablespoons
Steps
- Rinse the short-grain rice under cold water until the water runs clear. Drain well and set aside.
- In a medium saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for about 15 minutes or until all the water is absorbed.
- While the rice is cooking, heat sesame oil in a frying pan over medium heat. Add the julienned carrot and sliced shiitake mushrooms. Sauté for about 5 minutes until they begin to soften.
- Add the snow peas and edamame to the pan, along with the soy sauce and mirin. Stir-fry for an additional 3-4 minutes until the vegetables are tender yet crisp.
- Once the rice is cooked, fluff it gently with a fork and then mix in the sautéed vegetable mixture. Season with ground black pepper to taste.
- Serve the Gomoku Gohan warm, garnished with chopped green onions.
