Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 300 ml
  • Carrot - 1 medium, julienned
  • Shiitake mushrooms - 100 grams, sliced
  • Snow peas - 50 grams, trimmed
  • Edamame (shelled) - 50 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Ground black pepper - to taste
  • Chopped green onions - 2 tablespoons

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear. Drain well and set aside.
  2. In a medium saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for about 15 minutes or until all the water is absorbed.
  4. While the rice is cooking, heat sesame oil in a frying pan over medium heat. Add the julienned carrot and sliced shiitake mushrooms. Sauté for about 5 minutes until they begin to soften.
  5. Add the snow peas and edamame to the pan, along with the soy sauce and mirin. Stir-fry for an additional 3-4 minutes until the vegetables are tender yet crisp.
  6. Once the rice is cooked, fluff it gently with a fork and then mix in the sautéed vegetable mixture. Season with ground black pepper to taste.
  7. Serve the Gomoku Gohan warm, garnished with chopped green onions.
