Ingredients
- Spinach - 200 grams
- Sesame seeds - 4 tablespoons
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sugar - 1 teaspoon
- Rice vinegar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Garlic - 1 clove, minced
- Water - 500 milliliters
Steps
- Bring a pot of water to a boil. Add the spinach and blanch for 1-2 minutes until wilted.
- Drain the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Once cooled, squeeze out excess water and chop roughly.
- In a dry skillet over medium heat, toast the sesame seeds until golden brown, about 3-4 minutes, stirring frequently.
- In a bowl, combine toasted sesame seeds (reserve a small amount for garnish), soy sauce, mirin, sugar, rice vinegar, sesame oil, and minced garlic. Mix well to form the dressing.
- Add the chopped spinach to the dressing and mix until well coated.
- Serve the salad in bowls, garnished with the reserved toasted sesame seeds.
