Ingredients

  • Spinach - 200 grams
  • Sesame seeds - 4 tablespoons
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Rice vinegar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Water - 500 milliliters

Steps

  1. Bring a pot of water to a boil. Add the spinach and blanch for 1-2 minutes until wilted.
  2. Drain the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Once cooled, squeeze out excess water and chop roughly.
  3. In a dry skillet over medium heat, toast the sesame seeds until golden brown, about 3-4 minutes, stirring frequently.
  4. In a bowl, combine toasted sesame seeds (reserve a small amount for garnish), soy sauce, mirin, sugar, rice vinegar, sesame oil, and minced garlic. Mix well to form the dressing.
  5. Add the chopped spinach to the dressing and mix until well coated.
  6. Serve the salad in bowls, garnished with the reserved toasted sesame seeds.
