Ingredients

  • Sesame seeds - 75g
  • Almond flour - 50g
  • Egg - 1 large
  • Miso paste - 30g
  • Mozzarella cheese - 100g, shredded
  • Spinach - 50g, fresh
  • Shiitake mushrooms - 50g, sliced
  • Green onions - 2, chopped
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Black sesame seeds - 1 tablespoon (for garnish)
  • Salt - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a food processor, blend sesame seeds and almond flour until finely ground.
  3. In a mixing bowl, combine the ground sesame seed and almond flour mixture with the egg, miso paste, and a pinch of salt. Mix until a dough forms.
  4. Line a baking sheet with parchment paper and spread the dough into a circular shape, about 1 cm thick, to form the pizza crust.
  5. Bake the crust in the preheated oven for 10-12 minutes, or until it turns golden brown.
  6. While the crust is baking, heat olive oil in a pan over medium heat and sauté the shiitake mushrooms and spinach until tender. Season with soy sauce and a pinch of salt.
  7. Once the crust is done, remove it from the oven and sprinkle the shredded mozzarella cheese evenly on top.
  8. Add the sautéed mushrooms and spinach, followed by chopped green onions.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, garnish with black sesame seeds, slice, and serve hot.
