Steps
- Bring a pot of water to a boil and prepare an ice bath in a bowl with cold water and ice cubes.
- Add the fresh spinach to the boiling water and blanch for about 1-2 minutes until wilted.
- Immediately transfer the spinach to the ice bath to stop the cooking process. Let it cool for a few minutes.
- Once cooled, drain the spinach and gently squeeze out excess water. Chop into bite-sized pieces.
- In a small bowl, combine the roasted sesame seeds, soy sauce, mirin, sugar, and sesame oil. Mix until well combined.
- Add the chopped spinach to the sesame dressing and toss until evenly coated.
