Ingredients

  • Spinach - 200 grams
  • Sesame seeds - 30 grams
  • Soy sauce - 1 tablespoon (15 ml)
  • Mirin - 1 tablespoon (15 ml)
  • Sugar - 1 teaspoon (5 grams)
  • Tofu (firm) - 100 grams
  • Sesame oil - 1 teaspoon (5 ml)
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a pot.
  2. Add the spinach to the boiling water and blanch for 1-2 minutes until wilted.
  3. Drain the spinach and immediately transfer it to a bowl of cold water to stop the cooking process.
  4. In a dry pan, toast the sesame seeds over medium heat for 2-3 minutes until fragrant, then let them cool.
  5. In a mixing bowl, combine the toasted sesame seeds, soy sauce, mirin, sugar, and sesame oil. Mix until well combined.
  6. Squeeze excess water from the spinach and chop it into bite-sized pieces.
  7. Add the chopped spinach to the sesame dressing and toss until evenly coated.
  8. Cut the tofu into small cubes and gently fold into the salad.
  9. Serve immediately or chill in the refrigerator for 10 minutes before serving.
