- Strawberries - 4 medium, hulled and halved
- Mango - 1 small, peeled and diced
- Kiwi - 1 small, peeled and sliced
- Coconut flakes - 20 grams (optional, for garnish)
Steps
- In a mixing bowl, combine the sweet rice flour, sugar, and water to form a smooth batter.
- Transfer the mixture to a microwave-safe dish and cover with plastic wrap, leaving a small vent.
- Microwave on high for 1 minute, then stir. Repeat the process, microwaving for 1 minute intervals and stirring until the mixture becomes thick and translucent (about 3-4 minutes total).
- Dust a clean surface with cornstarch, then pour the mochi mixture onto the surface and let it cool for a few minutes.
- Once cool enough to handle, dust your hands with cornstarch and divide the mochi into equal portions (about 10 pieces).
- Flatten each portion into a round disc, then place a piece of fruit in the center (strawberry, mango, or kiwi).
- Wrap the mochi around the fruit and pinch to seal. Ensure the fruit is fully enclosed.
- Roll each mochi in cornstarch to prevent sticking, then place on a plate and chill in the refrigerator for about 10 minutes before serving.
- Optionally, sprinkle with coconut flakes before serving for added texture.
