- Cream cheese - 100 grams
- Shredded mozzarella cheese - 50 grams
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Green onions - 1 stalk, chopped
- Black sesame seeds - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat your oven to 200°C (390°F).
- Wash the eggplant and cut it into 1 cm thick slices. If desired, sprinkle with salt and let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the eggplant slices to the skillet and cook until they are softened and slightly browned, about 5-7 minutes. Season with salt and pepper to taste.
- In a bowl, mix the miso paste and cream cheese until smooth. Stir in the chopped green onions.
- In a baking dish, layer half of the cooked eggplant, spread half of the miso-cream cheese mixture over it, and top with half of the mozzarella cheese.
- Repeat the layers with the remaining eggplant, miso-cream cheese mixture, and finish with the rest of the mozzarella cheese.
- Sprinkle black sesame seeds on top and bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool slightly before serving.
