Ingredients

  • Eggplant - 300 grams
  • Miso paste - 2 tablespoons
  • Cream cheese - 100 grams
  • Shredded mozzarella cheese - 50 grams
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Green onions - 1 stalk, chopped
  • Black sesame seeds - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Wash the eggplant and cut it into 1 cm thick slices. If desired, sprinkle with salt and let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the eggplant slices to the skillet and cook until they are softened and slightly browned, about 5-7 minutes. Season with salt and pepper to taste.
  5. In a bowl, mix the miso paste and cream cheese until smooth. Stir in the chopped green onions.
  6. In a baking dish, layer half of the cooked eggplant, spread half of the miso-cream cheese mixture over it, and top with half of the mozzarella cheese.
  7. Repeat the layers with the remaining eggplant, miso-cream cheese mixture, and finish with the rest of the mozzarella cheese.
  8. Sprinkle black sesame seeds on top and bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let it cool slightly before serving.
