  • Pizza dough - 200 grams
  • Edamame (shelled) - 150 grams
  • Fresh basil leaves - 30 grams
  • Garlic - 1 clove
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper (any color) - 1 small, sliced
  • Red onion - 1/4, thinly sliced
  • Sesame oil - 1 teaspoon for drizzling

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a food processor, combine the shelled edamame, fresh basil, garlic, lemon juice, olive oil, nutritional yeast, salt, and black pepper. Blend until smooth to create the edamame pesto.
  3. Roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer to a baking sheet or pizza stone.
  4. Spread the edamame pesto evenly over the rolled-out pizza dough.
  5. Distribute the halved cherry tomatoes, sliced bell pepper, and red onion evenly over the pesto.
  6. Place the pizza in the preheated oven and bake for 15-20 minutes, or until the crust is golden and the vegetables are tender.
  7. Once baked, remove the pizza from the oven and drizzle with sesame oil before slicing and serving.
