Ingredients

  • Edamame - 200 grams (shelled)
  • Cooked quinoa - 100 grams
  • Carrot - 1 medium, grated
  • Green onion - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Rice flour - 2 tablespoons
  • Breadcrumbs - 4 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1, sliced

Steps

  1. Steam the edamame for about 5 minutes until tender, then allow to cool and mash lightly with a fork.
  2. In a large bowl, combine the mashed edamame, cooked quinoa, grated carrot, green onion, minced garlic, grated ginger, soy sauce, sesame oil, rice flour, breadcrumbs, salt, and black pepper. Mix until well combined.
  3. Form the mixture into 2 patties, ensuring they are compact.
  4. Heat a non-stick skillet over medium heat with a little oil. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, adding the cooked patty, followed by slices of tomato and avocado. Top with the other half of the bun.
  7. Serve immediately with your choice of side.
