Ingredients

  • Large shrimp - 250 grams (about 10 shrimp)

  • Cornstarch - 40 grams
  • Baking powder - 1 teaspoon
  • Ice water - 120 ml
  • Salt - 1/2 teaspoon
  • Vegetable oil - for frying
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Grated daikon radish - 50 grams (for serving)

Steps

  1. Peel and devein the shrimp, leaving the tails intact, and pat them dry with paper towels.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt.
  3. Gradually add the ice water to the dry ingredients, mixing gently until just combined (do not overmix).
  4. In a deep pan or wok, heat vegetable oil to 180°C (350°F).
  5. Dip each shrimp into the batter, allowing excess to drip off, then carefully place them into the hot oil.
  6. Fry the shrimp in batches for about 2-3 minutes or until golden brown and crispy.
  7. Remove the shrimp from the oil and drain on paper towels.
  8. In a small bowl, mix soy sauce and mirin to create a dipping sauce.
  9. Serve the Ebi Tempura hot, garnished with grated daikon radish and accompanied by the dipping sauce.
