- Ice water - 120 ml
- Salt - 1/2 teaspoon

- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Grated daikon radish - 50 grams (for serving)
Steps
- Peel and devein the shrimp, leaving the tails intact, and pat them dry with paper towels.
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt.
- Gradually add the ice water to the dry ingredients, mixing gently until just combined (do not overmix).
- In a deep pan or wok, heat vegetable oil to 180°C (350°F).
- Dip each shrimp into the batter, allowing excess to drip off, then carefully place them into the hot oil.
- Fry the shrimp in batches for about 2-3 minutes or until golden brown and crispy.
- Remove the shrimp from the oil and drain on paper towels.
- In a small bowl, mix soy sauce and mirin to create a dipping sauce.
- Serve the Ebi Tempura hot, garnished with grated daikon radish and accompanied by the dipping sauce.
