  • Zucchini (sliced) - 1 small
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce (low sodium) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Xylitol (or erythritol) - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Green onions (sliced) - 2 tablespoons
  • Sesame seeds - 1 teaspoon

Steps

  1. In a medium bowl, combine the soy sauce, rice vinegar, xylitol, minced garlic, and grated ginger to create the marinade.

  3. Heat sesame oil in a large skillet or wok over medium-high heat.
  4. Add the marinated shrimp, cooking for about 2-3 minutes until they turn pink and opaque.
  5. Add the sliced red bell pepper and zucchini to the skillet, stir-frying for an additional 3-4 minutes until the vegetables are tender but still crisp.
