Ingredients

  • Gluten-free flour - 100g
  • Baking powder - 1 tsp
  • Egg - 1 large
  • Milk - 60ml
  • Honey - 2 tbsp
  • Sugar - 1 tbsp
  • Salt - a pinch
  • Red bean paste - 80g
  • Butter - for cooking

Steps

  1. In a mixing bowl, combine gluten-free flour and baking powder.
  2. In another bowl, whisk together the egg, milk, honey, sugar, and a pinch of salt until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a smooth batter forms.
  4. Heat a non-stick frying pan over medium heat and lightly grease it with butter.
  5. Pour about 2 tablespoons of batter onto the pan to form a pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
  6. Repeat with the remaining batter, greasing the pan as needed.
  7. Spread a spoonful of red bean paste on one pancake, top with another pancake, and gently press together.
  8. Serve warm and enjoy your gluten-free Dorayaki!
