- Gluten-free flour - 100g
- Baking powder - 1 tsp
- Egg - 1 large
- Milk - 60ml
- Honey - 2 tbsp
- Sugar - 1 tbsp
- Salt - a pinch
- Red bean paste - 80g
- Butter - for cooking
Steps
- In a mixing bowl, combine gluten-free flour and baking powder.
- In another bowl, whisk together the egg, milk, honey, sugar, and a pinch of salt until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a smooth batter forms.
- Heat a non-stick frying pan over medium heat and lightly grease it with butter.
- Pour about 2 tablespoons of batter onto the pan to form a pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
- Repeat with the remaining batter, greasing the pan as needed.
- Spread a spoonful of red bean paste on one pancake, top with another pancake, and gently press together.
