Ingredients

  • Udon noodles - 200 grams
  • Mushrooms (shiitake or cremini) - 100 grams, sliced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, diced
  • Green onions - 2, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Coconut milk - 200 ml
  • Nutritional yeast - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Panko breadcrumbs (gluten-free if needed) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the udon noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
  4. Add the sliced mushrooms, diced bell pepper, julienned carrot, and diced zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
  5. In a bowl, mix soy sauce, coconut milk, nutritional yeast, cornstarch, salt, and black pepper until well combined.
  6. Add the cooked udon noodles to the skillet with the sautéed vegetables and pour the sauce over. Toss everything together until evenly coated.
  7. Transfer the noodle mixture to a baking dish and spread it out evenly.
  8. Sprinkle panko breadcrumbs on top of the noodle mixture.
  9. Bake in the preheated oven for 20 minutes, or until the top is golden and crispy.
  10. Remove from the oven, garnish with sliced green onions, and serve hot.
