- Baking powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Water - 300 ml
- Soy sauce - 1 tablespoon
- Vegetable oil - for greasing the takoyaki pan
- Cooked octopus, diced - 100 grams
- Green onions, chopped - 2 tablespoons
- Pickled ginger, chopped - 1 tablespoon
- Nori (seaweed), shredded - for garnish
- Dairy-free mayonnaise - for drizzling
- Takoyaki sauce (vegan) - for drizzling
Steps
- In a large mixing bowl, combine the all-purpose flour, cornstarch, dashi powder, baking powder, and salt.
- Gradually whisk in the water and soy sauce until the batter is smooth and well combined.
- Preheat a takoyaki pan over medium heat and lightly grease each mold with vegetable oil.
- Pour the batter into each mold, filling them about 3/4 full.
- Add a few pieces of diced octopus, chopped green onions, and pickled ginger into each mold.
- Cook for about 3-4 minutes until the bottom is golden brown, then use a skewer to turn the takoyaki balls 90 degrees.
- Continue to cook for another 3-4 minutes, turning them frequently until they are evenly browned and cooked through.
- Once cooked, carefully remove the takoyaki from the pan and place them on a serving plate.
- Drizzle with dairy-free mayonnaise and takoyaki sauce, then sprinkle with shredded nori.
