Ingredients

  • Daikon radish - 150 grams, peeled and sliced
  • Carrot - 100 grams, peeled and sliced
  • Shiitake mushrooms - 4 pieces, stems removed
  • Firm tofu - 200 grams, cut into cubes
  • Konnyaku (konjac) - 100 grams, cut into bite-sized pieces
  • Green onions - 2 stalks, chopped
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Dashi stock (vegan) - 400 ml
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pot, combine the dashi stock, soy sauce, mirin, and sesame oil. Bring to a simmer over medium heat.
  3. Add the sliced daikon, carrot, shiitake mushrooms, and konnyaku to the pot. Simmer for about 20 minutes until the vegetables are tender.
  4. In a baking dish, arrange the tofu cubes and pour the simmered vegetable mixture over them, ensuring the tofu is submerged in the broth.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  6. Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
  7. Once done, remove from the oven and let it cool for a few minutes. Serve hot, garnished with chopped green onions.
