- Daikon radish - 150 grams, peeled and sliced
- Carrot - 100 grams, peeled and sliced
- Shiitake mushrooms - 4 pieces, stems removed
- Firm tofu - 200 grams, cut into cubes
- Konnyaku (konjac) - 100 grams, cut into bite-sized pieces
- Green onions - 2 stalks, chopped
- Soy sauce - 30 ml
- Mirin - 15 ml
- Dashi stock (vegan) - 400 ml
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a pot, combine the dashi stock, soy sauce, mirin, and sesame oil. Bring to a simmer over medium heat.
- Add the sliced daikon, carrot, shiitake mushrooms, and konnyaku to the pot. Simmer for about 20 minutes until the vegetables are tender.
- In a baking dish, arrange the tofu cubes and pour the simmered vegetable mixture over them, ensuring the tofu is submerged in the broth.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
- Once done, remove from the oven and let it cool for a few minutes. Serve hot, garnished with chopped green onions.
