Ingredients

  • Bitter melon - 100 grams
  • Firm tofu - 200 grams
  • Carrot - 50 grams
  • Red bell pepper - 50 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the bitter melon in half, remove the seeds, and thinly slice it. Sprinkle with a little salt and let it sit for about 10 minutes to reduce bitterness.
  3. While the bitter melon is resting, dice the firm tofu into cubes and chop the carrot and red bell pepper into bite-sized pieces.
  4. In a large mixing bowl, combine the tofu, carrot, red bell pepper, minced garlic, grated ginger, and chopped green onions.
  5. Add the sliced bitter melon to the bowl, along with soy sauce, sesame oil, and nutritional yeast. Season with salt and black pepper to taste, and gently toss to combine.
  6. Transfer the mixture to a baking dish and spread it out evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the tofu is slightly golden.
  8. Remove from the oven and let it cool for a few minutes before serving.
