- Pork belly - 300 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Brown sugar - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Green onions - 2, sliced
- Sesame oil - 1 tablespoon
Steps
- Preheat the oven to 160°C (320°F).
- In a bowl, combine soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil to make the marinade.
- Place the pork belly in a baking dish and pour the marinade over it, ensuring the meat is well-coated. Add the sliced green onions on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 90 minutes.
- After 90 minutes, remove the foil and increase the oven temperature to 200°C (390°F). Bake uncovered for an additional 20-30 minutes, basting the pork with the sauce halfway through.
- Once the pork is caramelized and tender, remove it from the oven and let it rest for 10 minutes before slicing.
- Serve the Dairy-Free Chashu warm, drizzled with the remaining sauce, alongside rice or ramen.
