Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green onions - 2, sliced
  • Sesame oil - 1 tablespoon

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, combine soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil to make the marinade.
  3. Place the pork belly in a baking dish and pour the marinade over it, ensuring the meat is well-coated. Add the sliced green onions on top.
  4. Cover the dish with aluminum foil and bake in the preheated oven for 90 minutes.
  5. After 90 minutes, remove the foil and increase the oven temperature to 200°C (390°F). Bake uncovered for an additional 20-30 minutes, basting the pork with the sauce halfway through.
  6. Once the pork is caramelized and tender, remove it from the oven and let it rest for 10 minutes before slicing.
  7. Serve the Dairy-Free Chashu warm, drizzled with the remaining sauce, alongside rice or ramen.
