Ingredients
- Daikon radish - 200 grams, peeled and diced
- Carrot - 100 grams, peeled and sliced
- Shiitake mushrooms - 50 grams, sliced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Vegetable broth - 500 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced shiitake mushrooms to the pot and cook for another 2-3 minutes until they start to soften.
- Stir in the diced daikon radish and sliced carrot, cooking for another 5 minutes to allow the vegetables to slightly soften.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let it cook for 15 minutes until the vegetables are tender.
- Stir in the soy sauce and season with salt and black pepper to taste.
- Remove from heat and garnish with chopped green onion and cilantro before serving.
