Ingredients

  • Daikon radish - 200 grams, peeled and diced
  • Carrot - 100 grams, peeled and sliced
  • Shiitake mushrooms - 50 grams, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Add the sliced shiitake mushrooms to the pot and cook for another 2-3 minutes until they start to soften.
  3. Stir in the diced daikon radish and sliced carrot, cooking for another 5 minutes to allow the vegetables to slightly soften.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let it cook for 15 minutes until the vegetables are tender.
  5. Stir in the soy sauce and season with salt and black pepper to taste.
  6. Remove from heat and garnish with chopped green onion and cilantro before serving.
