Ingredients

  • Daikon radish - 400 grams
  • All-purpose flour - 50 grams
  • Cornstarch - 20 grams
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onions - 2, sliced
  • Bell pepper - 1, thinly sliced
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon
  • Chili flakes - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel the daikon radish and grate it using a box grater or food processor until you have about 400 grams of grated daikon.
  3. In a bowl, combine the grated daikon, all-purpose flour, cornstarch, and salt. Mix well until all ingredients are fully incorporated.
  4. Transfer the mixture to a clean kitchen towel and squeeze out excess moisture to form a dough-like consistency.
  5. On a baking sheet lined with parchment paper, shape the daikon mixture into a round pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes or until it is golden and crisp.
  7. While the crust is baking, prepare the sauce by mixing miso paste, soy sauce, and minced garlic in a small bowl.
  8. Once the crust is done, spread the miso sauce evenly over the top.
  9. Layer the sliced bell pepper, mushrooms, and spinach on top of the miso sauce.
  10. Return the pizza to the oven and bake for an additional 10 minutes until the vegetables are tender.
  11. Remove the pizza from the oven and sprinkle with sliced green onions, sesame seeds, and chili flakes to taste.
  12. Slice and serve the Daikon Radish Pizza warm.
