Steps

  1. Peel the daikon radish and use a spiralizer or vegetable peeler to create thin 'noodles'. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add sliced bell pepper, julienned carrot, and zucchini to the skillet. Stir-fry for about 5 minutes until the vegetables are tender-crisp.
