- Dashi stock - 500 milliliters
- Green onions - 2 stalks

- Garlic - 1 clove, minced
- Sesame oil - 1 teaspoon
- Fresh cilantro - a handful
Steps
- Peel the daikon radish and use a spiralizer or a vegetable peeler to cut it into thin noodle-like strips.
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the chicken breast to the pot and cook until browned on all sides, about 5-7 minutes.
- Pour in the dashi stock and bring to a simmer. Stir in the miso paste and soy sauce until fully dissolved.
- Add the daikon noodles to the pot and cook for an additional 5-7 minutes until they are tender.
- Chop the green onions and add them to the soup just before serving.
- Garnish with fresh cilantro and serve hot.
