Ingredients

  • Daikon radish - 300 grams
  • Chicken breast - 150 grams
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Dashi stock - 500 milliliters
  • Green onions - 2 stalks
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Sesame oil - 1 teaspoon
  • Fresh cilantro - a handful

Steps

  1. Peel the daikon radish and use a spiralizer or a vegetable peeler to cut it into thin noodle-like strips.
  2. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add the chicken breast to the pot and cook until browned on all sides, about 5-7 minutes.
  4. Pour in the dashi stock and bring to a simmer. Stir in the miso paste and soy sauce until fully dissolved.
  5. Add the daikon noodles to the pot and cook for an additional 5-7 minutes until they are tender.
  6. Chop the green onions and add them to the soup just before serving.
  7. Garnish with fresh cilantro and serve hot.
