Ingredients

  • Daikon radish - 150 grams
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar substitute (like erythritol) - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Toasted sesame seeds - 1 teaspoon
  • Chopped green onions - 1 tablespoon

Steps

  1. Peel the daikon radish and slice it thinly using a mandoline or a sharp knife.
  2. Place the sliced daikon in a bowl and sprinkle with salt. Let it sit for about 5 minutes to draw out excess moisture.
  3. In a separate bowl, whisk together the rice vinegar, soy sauce, sugar substitute, and sesame oil until well combined.
  4. After 5 minutes, rinse the daikon slices under cold water to remove excess salt, then pat them dry with a paper towel.
  5. Add the daikon to the vinegar mixture and toss to coat evenly.
  6. Let the salad marinate for another 5 minutes to enhance the flavors.
  7. Serve the sunomono in small bowls, garnished with toasted sesame seeds and chopped green onions.
